When we first jumped on the food-related promo code bandwagon way back in the day, we mostly talked about delicious foods that we 110% could get behind. But those days are over my friends—because what better excuse to rant about the foods we dislike than to use them as a monthly promo code. And we’re kicking it off with possibly the WORST vegetable in the history of vegetables: eggplant.
Not only does eggplant have a name that makes no sense (why would you call a purple, oblong veggie eggplant?), but it’s been ruining delicious food for years. Take for example eggplant parmesan, which takes what should be a delicious cheesy Italian dish and smacks the gross, spongy nonsense that is eggplant in the middle of it. If that isn’t bad enough, people are using eggplant as a substitute for pizza crust these days, which is an even worse crime than putting pineapple on pizza. (If you’re going to go with a veggie pizza base, cauliflower is where it’s at.)
